Three Simple Twists on One Complex Carb
I'm the laziest chef there is, which is problematic because I like to eat healthy without spending hours in the kitchen! Sweet potatoes are well-known for being a good-for-you type food.
Here are 3 of the easiest and fastest ways to eat this superfood. You won't even need "time to cook" because there's virtually no time spent making these dishes! Enjoy!
Preparation
Super simple. You just need two sweet potatoes, extra virgin olive oil (I don't have a fancy one, as you can tell), and a baking sheet lined with tin foil.
Preheat oven to 400 degrees. 2 Sweet Potatoes total: One halved and one whole sweet potato baked on one tinfoil lined baking sheet.
Olive you too! Drizzle the sweet potato pieces with olive oil and bake for 45-60mins.
The whole sweet potato can be cut in half to make more of a circular bun-looking type thing, and the halves are fine as is, or they can be further sliced down!
Sweet Potato Avocado Toast
This is self-explanatory, so I feel a little silly posting it! But, just in case anyone was wondering if the sweet potato would actually fit in the toaster...here is the proof. Trust = earned.
I'm always rushing out the door, and this is a preferred breakfast so I keep my toppings simple! I mash 1/2 of an avocado (with no rhyme or reason, just with a fork), and top the sweet potato halves with it. Sprinkle salt - (Himalayan pink sea salt is a current fave), and add crushed red pepper. Voila!
Sweet Potato Hamburger Bun
In my version, I sprayed a sautéing pan with coconut oil and cooked a ground chicken patty and fresh baby spinach over medium heat. The spinach will finish first, so remove and set aside while the burger cooks to completion.
Place the cooked chicken patty atop one of the sliced sweet potato buns. This lazy chef went a little crazy in the kitchen by adding two slices of fresh avocado.
Proof is in the perfection! You can indeed hold and eat this burger with your hands, just like you would a normal burger. Leave the fork and knife for a night out and grub on!
Spiral Sweet Potato Pasta
So easy...mainly because it's two ingrendients and I bought them both...but you can put your own twist on it!
....then photograph them! I'm not going to lie to you here, that is literally all I did. This is the result of an over-eager trip to Whole Foods, and I basically just overpaid for some pre-spiraled sweet potatoes and a vegan basil cashew spread. It was still delicious nonetheless!
